I am not going to lie, we are in a major meal funk at our house! I tend to make the same eight things over and over again on a weekly rotation. I am so sick of making these Pinterest worthy meals, to only have my kids not eat it. So, I go with the tried and true, and maybe try to sneak something new in once a while.
I’m by no means a professional chef, or a food photographer! This is just a mom, sharing what my family eats on a weekly basis. Nothing fancy.
Sheet Pan Chicken
This is my new family favor. I have no idea why but even my toddlers inhale this dinner. I am not about to rock that boat!
I take a sheet pan, on half I place chicken breast. On the other half I place whatever veggies I can find in the fridge.
Most of the time its sweet potatoes cut up, frozen broccoli, and onions. I bake this at 350 degrees for about 30-45 minutes until the chicken is done. This is my favorite night, because its super easy clean up- one pan!
Breakfast Night
I tend to do this one a week, it’s a quick and cheap meal to make. I know the kids will eat it, less battle on those days that we are really busy on.
I scramble up some eggs, and we make breakfast tacos with sausage and salsa. Sometimes we do pancakes, other nights I just make toast with jelly to serve with our egg bake.
Smothered Chicken
I love this night because again its one pan I have to clean. On half the pan I lay the chicken, the other half the veggies (whatever we have laying around).
There are three kinds of smothered chicken:
Pesto sauce and fresh mozzarella cheese on top
Cream cheese, chopped jalapenos, sharp cheddar cheese
Pasta sauce and fresh Mozzarella cheese
*I just cover the chicken breast with the sauce, put the cheese on top for the last ten minutes.
I bake it at 350 degrees for about 30-40 minutes, until the chicken is done.
Sweet Potato Sloppy Joes With Ranch Dressing
This was kind of weird the first time we tried it, sounds odd, but we LOVE this! It’s become a family favorite!
Prepare the sloppy joes like normal, place on top of a baked sweet potato. Mix one cup of plain Greek yogurt with one Tablespoon Ranch dressing from the packet. Drizzle this mixture on top of the sweet potato.
Gosh it’s so yummy! Plus, the kids just love it!
Pizza Night
We have pizza night on Friday night. It’s the one night a week I know we will all be home! It’s our special night as a family. We make the pizza together; each kid can put on their toppings. Then we watch a movie on the floor as we eat our own personal pizza.
I tend to use the small tortillas as shells for the kids. It’s less bread and they are the prefect size. We use left over pasta sauce for the topping. My kids love ham and pineapple or sometimes we do breakfast pizza with eggs and sausage on top!
Crockpot Meatballs and Spaghetti Squash
A great dump meal on our busy nights! I put meatballs in the crockpot with pasta sauce. Then I cut the squash in half, scoop out the seeds, and place cut side down in the crockpot. By cooking it the crockpot the texture is just like noodles, plus its only one pan to clean at the end of the night.
When we get home from dance, dinner is ready and I don’t need to boil water for noodles.
My husband is a Carb King, but he loves this meal!
Crockpot Chicken Dump
These meals are meant for left overs if you know you will have two busy days in a row. You can make it two ways
Salsa Chicken- Place 4-6 chicken breast in your crockpot, cover with one cup of your choice of salsa. You can serve them with rice, corn, and beans to make your own homemade taco bowls. The next night you can use the left overs for tacos.
BBQ Chicken- Place 4-6 chicken breast into the crockpot, cover with one cup of BBQ sauce. Serve the chicken on a bun as a “pulled chicken sandwich”. The next night you can make homemade BBQ chicken pizza with the left overs! Just put BBQ sauce on a pizza crust add the chicken, a sliced red onion, and cheddar cheese!
Fried Rice
This is the night I clean out the fridge! I cook up some rice, I add in whatever veggies we have laying around, some chicken (if we have leftovers), a few fried eggs, and a touch of soy sauce.
The kids eat it up!!!
We also LOVE this recipe for a Hawaiian Fried Rice!! OHHH MY GOSH! They kid just love it! It’s so good! Make sure you make a big batch because the left are amazing!
I hope these are some new ideas to add to your own weekly meal plan rotation. As a mom it’s hard some nights to get dinner on the table, trust me I get it. These are the fastest, and easiest meals I have in my back pocket!
Try nann bread instead of tortilla shells. Bit thicker for young kids to handle and yummy. Perfect size for make your own style. If you can’t find an indian store that sells them in bulk in the freezer section try Costco. Met you at the JBF sale today. Love the site.
